Today's lunch

Sorry for the not-so-great camera phone pic.  While I'm getting pretty good at making myself put lunches together at night, I still tend procrastinate with the picture-taking.


Nothing too fancy here...sliced chicken, cheese & romaine lettuce on a kaiser-type roll.  Pretzels as my crunchy element and some sliced strawberries for dessert.

Muffin Tin Monday – Bits and pieces

I’ve wanted to participate in “Muffin Tin Monday” for awhile but just haven’t had any good ideas for themes.  Still haven’t come up with any great ideas but one night this week I had no great ideas for dinner either so I threw together a little bit of this and little bit of that for Munch.

She had apple slices with peanut butter below for dipping.  Next to the apples are cheese cubes and cucumbers.  Below the cheese is grilled chicken and for dessert, Organic cookies from Earth’s Best.

Have you heard of Swagbucks?  Its a search engine that rewards you for using it!  Type in your searches just like you would on Google or Yahoo! and you will randomly be rewarded Swagbucks that can be redeemed for cool merchandise or my preference, Amazon gift cards!!!  To date I have earned $25 in Amazon through Swagbucks as well as donating to relief efforts for Haiti and their Holiday Toy Drive.  I'm planning to use the gfit cards I earn at Amazon.com to buy some bento accessories or cookbooks.

I'm back!

I've been out of office a bit lately and haven't needed to pack my lunches.  Today I'm back at it!!

Turkey & cheese sandwich on Nature's Own sandwich round,
vanilla wafers & wheat crackers in big compartment. 
Cheese cubes in the smaller one up top and
carrots and cucumbers in the bottom bigger compartment.

This was more than enough for lunch so I had what was leftover for a snack later!

I recently got some new containers and am excited to use them and share!!  Some came from somewhere you probably would have never thought of!!

Lazy Lunch

I spent my free time last night playing with my new layout and didn't want to stay up late to make my lunch.  (tsk,tsk).  Cut to this morning and of course I don't have time to make lunch again....so I packed up the pieces and assembled my sandwich at lunchtime.  I really wanted the pinwheel/wrap things I made yesterday but since I procrasinated, I had the sandwich rounds from Nature's Own instead

I'm ready for the weekend.  We're hoping to take Munch to the zoo or the Children's Museum or maybe even both!!  If we do go to the zoo, they encourage bringing your own coolers for lunch so we might just bring the EasyLunchboxes along!!

I'm also excited to play with my new toy!!!

They’re here!!

I technically shared this in the last post but my EasyLunchboxes arrived yesterday and I put them to good use right away!!

Cooler bag…I fit two EasyLunchboxes containers, a small Tupperware and Munch’s big sippy cup in here this morning.

Turkey, cheese & lettuce on wheat tortilla with hummus as a spread.  Cheese cubes in a silicone cup, carrots in the middle-sized compartment and banana slices left over from Munch’s breakfast in the small compartment.

One more day left this week!!

Breakfast for Munch

Munch has physical therapy every Thursday and to make those rushed mornings a little less chaotic, we take her breakfast with us and she eats it at the picnic table in the waiting room.  Lately, the easiest thing for me has been to make pancakes the night before.  Munch loves them and they are pretty easy to eat without making a huge mess.

This week, I put banana slices in them.  It didn't work that great so I probably won't do that again.  In the little compartment are blackberries.  And a napkin under the blackberries.

Luckily I put the extra pancakes in a container for Daddy, who had PT duty this week, because Miss Munch was apparently still hungry after eating the two I packed for her.

This breakfast was put together in my new EasyLunchboxes!!!  I was surprised how big they were!  Although I guess I needed one more pancake in there for Munch, I think they might be a little too big to use for her breakfasts.  But for my lunch, which I'll post later, it was just right.

What's for Lunch Wednesday!

Shannon at What's for Lunch at our House has come up with a great blog carnival to share our favorite bentos of the week.



I'm still new to this bento deal-y so instead of picking my favorite of the week, I'll just show what I'm actually having for lunch Wednesday.

After Munch went to bed, I made a trip to the grocery store and while there looked for alternatives to plain 'ol bread for sandwiches.  I came across a couple different brands of new sandwich thins.  I chose the Nature's Own and yum!!!  For today's lunch, I used the new Sandwich Thins for my chicken salad sandwich.  I also discovered Nabisco Wheat Thins Flatbreads.  They were pretty cheap so I grabbed a box of both the  Garlic and Parsley and Tuscan Herbs.  The Tuscan Herbs is what's above and, as promised, the hummus is back as a dip for those and the carrots.  Finally, there are strawberries for dessert.

So far I'm still using random Rubbermaid, Glad or whatever brand reusable plastic containers that were already stored neatly thrown in my cupboard.  That's about to change!!  I won a set of EasyLunchboxes in a blog giveaway and unless UPS is playing a cruel trick on me, they should arrive today.  Tomorrow is a physical therapy day for Munch so I'll be packing a breakfast for her as well as lunch for me so I'm excited to try out the EasyLunchboxes.

Post Holiday Lunch

Lunch: Tuesday June 1, 2010

After the holiday weekend, I wasn't too enthusiastic about beginning another new workweek so I put off putting my lunch together as long as I could.  Add to that we didn't make it to the grocery store as planned and that led to a late night scramble.

I've got here two turkey and cheese roll-ups on wheat bread.  I really like the idea of these but I need to work on the execution.  I gottta have something crunchy so there are pretzels in a silicone baking cup.  Also in silicone baking cups are cheese cubes and mix of teddy grahams and animal crackers I "borrowed" from my daughter.

I'm pretty sure I'd had hummus before but on a quick stop at the grocery store I picked up some in roasted red pepper flavor.  I have been loving it!!!  I used it on my turkey roll-ups instead of mayo and it added a nice little kick to an otherwise mild sandwich.  I'll be experimenting with it quite a bit this week!!
